Regulated by the SCAA (Specialty Coffee Association of America), the Gold Cup standard requires that the brew temperature is between 195° - 205°F and that the length of the brew cycle is more than 2 minutes and less than 8 minutes. This ensures full saturation of the coffee grounds and the best flavor extraction.
